Besan Chilla

Besan chilla is an answer to busy mornings when you need something filling before school / office.

What is Besan Chilla?

Besan chilla is a savory pancake made from a batter of gram flour (besan), water, and spices, cooked on a hot griddle until crisp at the edges and soft in the center. Often called the vegetarian answer to an omelette, it comes together in minutes and can be customized with vegetables like onion, tomato, and spinach folded into the batter.

Where Besan Chilla Comes From

Besan chilla is a North Indian breakfast staple, especially popular in Punjab and across the Hindi belt, where gram flour is a kitchen staple used in everything from curries to snacks. It’s traditionally eaten for breakfast with a side of chutney or pickle, and has become a favorite in modern Indian households for its speed and high protein content compared to many other breakfast options.

Health Benefits of Gram Flour (Besan)

  • Besan is naturally gluten-free and rich in plant protein, making it a solid vegetarian breakfast option.
  • It has a low glycemic index, which helps keep blood sugar levels steadier compared to refined flour options.
  • Besan is a good source of fiber, which supports digestion and keeps you full for longer.
  • It contains iron and folate, both important for energy and red blood cell production.

Ingredients:

  • 1 cup besan (gram flour)
  • 3/4 cup water, adjusted for consistency
  • 1 small onion, finely chopped
  • 1 small tomato, finely chopped
  • 1 green chili, finely chopped
  • 2 tablespoons fresh coriander, chopped
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon carom seeds (ajwain)
  • Salt to taste
  • Oil, for cooking

Instructions:

Step 1: Make the batter

In a bowl, whisk together besan, water, turmeric, chili powder, ajwain, and salt until you have a smooth, lump-free batter with a pourable, pancake-like consistency.

Step 2: Add the vegetables

Stir in the chopped onion, tomato, green chili, and coriander leaves until evenly distributed through the batter.

Step 3: Cook the chilla

Heat a nonstick tawa or skillet and lightly grease it with oil. Pour a ladleful of batter and spread it into a thin circle. Drizzle a little oil around the edges and cook for 2-3 minutes until the underside is golden.

Step 4: Flip and finish

Flip carefully and cook the other side for another 1-2 minutes until both sides are golden and cooked through. Repeat with the remaining batter.

Tips:

Let the batter rest for 5-10 minutes before cooking; this helps the besan hydrate fully and prevents a raw, chalky taste. Keep the flame on medium so the chilla cooks through without burning the outside. For extra flavor, add a pinch of chaat masala just before folding and serving.

Preparation time: 20 minutes

Common mistakes: Making the batter too thick, which results in a dense, undercooked center; cooking on too high a flame, which burns the outside before the inside sets; and skipping the resting time for the batter.

Substitutions: Add grated paneer or spinach for extra protein and nutrients. Swap green chili for black pepper if you prefer a milder chilla. Use a mix of besan and suji (semolina) for a slightly crispier texture.

Storage and reheating: Best eaten fresh, but leftover batter (without vegetables mixed in) can be refrigerated for up to a day. Reheat cooked chillas briefly on a hot tawa to restore crispness.

What to serve with it: Pair with green chutney, tomato ketchup, or a cup of masala chai for a complete, quick breakfast.
