Idly Dosa batter

I used to think the rise in idli batter overnight was basically magic – one day it’s a flat, watery mix of rice and dal, and the next morning it’s doubled in size and smells faintly sour. It wasn’t until I actually looked into the microbiology of it that I understood what my grandmother’s kitchen had been doing perfectly for decades without ever using the word “fermentation.”

What is Fermentation, Really?

Fermentation is a process where naturally occurring bacteria and yeast break down starches and sugars in food, producing gases, acids and new compounds along the way. In idli and dosa batter, wild yeasts and lactic acid bacteria present on the rice, urad dal and in the air feed on the soaked grains overnight, releasing carbon dioxide (which creates the bubbles that make the batter rise) and lactic acid (which gives the batter its mild tang).

Where This Fits in Indian Food Culture

Fermented foods are deeply embedded in Indian cooking, not just in idli and dosa but in dhokla, appam, and even pickles. South Indian households have relied on this overnight fermentation process for generations, long before “gut health” became a wellness buzzword – it developed simply because it made rice and dal more digestible and better tasting, and happened to work reliably in India’s warm climate.

The Real Benefits

  • Fermentation partially breaks down starches and proteins, making the final dish easier to digest than the raw batter would be
  • It increases the bioavailability of certain nutrients, including B vitamins
  • The process naturally reduces some antinutrients present in raw grains and lentils
  • Live fermented batter can carry beneficial bacteria, similar in principle to other fermented foods like yogurt
  • The acid produced acts as a natural preservative, which is part of why fermented batter keeps well in the fridge for several days

How To Get Good Fermentation at Home

  • Use a good ratio of rice to urad dal (roughly 3:1 or 4:1) – the dal is what drives most of the fermentation
  • Warm temperatures (around 25-30°C) speed up fermentation; in cooler weather, keep the batter in a warm spot like an oven with the light on
  • Don’t over-salt the batter before fermentation, since salt can slow down bacterial activity add it at the start in a small amount or after fermenting
  • Use non-chlorinated water where possible, since chlorine can interfere with the natural bacteria
  • Give it enough time like 8-12 hours is typical, but this varies a lot with climate and season

Once you understand what’s actually happening in that bowl overnight, it’s hard not to appreciate how much good food science was baked into Indian kitchens long before anyone had a name for it.
