Gujarati Kadhi Recipe | How to make Gujarati Kadhi
Gujarati kadhi as the name suggests is a dish from Gujarat state. This curry is an alternative to dal and is generally sweet and tangy in taste. This is eaten with rice / khichdi.
Here is a simple recipe on how to make Gujarati Kadhi at home using simple ingredients.
Ingredients:
- 1 glass buttermilk
- 1 cup Besan
- 1 teaspoon Jeera
- Salt to taste
- 8-10 curry leaves
- 1 cup finely chopped coriander leaves
- 1 tablespoon jaggery
Step by step instructions to prepare the Gujarati Kadhi.
Step 1:
- In a mixing bowl, whisk together the buttermilk and besan until smooth, ensure that there are no lumps.
- Gradually add water to the buttermilk-besan mixture while whisking, until it forms a smooth liquid. Keep it aside.
Step 2:
- Pour the prepared yogurt-besan mixture into the pan and heat it. Stir it continuously and add 1/2 teaspoon salt
- Add jaggery and mix everything well.
- Allow the Kadhi to simmer over low heat for about 15- 20 minutes, stirring occasionally.
Step 3:
- Heat ghee in a pan
- Add 1 teaspoon Jeera (Cumin seeds) and curry leaves. You can add grated ginger/ garlic in the tadka.
Step 4:
- Garnish the Kadhi with finely chopped coriander leaves
- Gujarati Kadhi is ready. Serve Gujarati Kadhi hot with steamed rice or Khichdi.
