Sooji Halwa recipe

Sooji halwa is a popular and traditional Indian sweet dish made from semolina, sugar, ghee and flavored with cardamom and saffron. It is enjoyed across India and is often prepared during festivals, religious occasions and special occasions such as weddings, birthdays etc. 

Sooji halwa is relatively easy to prepare and requires only a few basic ingredients. It can be made quickly and is suitable for both casual and formal occasions.

Sooji halwa can be prepared using milk or water. In this recipe we are making sooji halwa using milk. 

Ingredients:

Ingredients:

  • 1 cup semolina (sooji or rava)
  • 1/2 cup sugar (Adjust as per taste preference)
  • 2 cups milk
  • 4 tablespoons ghee (clarified butter)
  • 1/4 teaspoon cardamom powder
  • 3-4 saffron strands 
  • Assorted nuts (almonds, cashews, pistachios) for garnish
  • Raisins (add if you like it)

nstructions:

  1. Heat the ghee in a heavy-bottomed pan or kadhai over medium heat.
  2. Add the semolina (sooji) to the pan and roast it, stir it continuously until it turns golden brown and aromatic. 
  3. In a separate saucepan, heat the milk until it simmers.
  4. Slowly pour the hot milk into the roasted semolina/ sooji while stirring continuously to avoid lumps. Ghee will start appearing on top.
  5. Add sugar and continue stirring until the mixture thickens and sugar is completely dissolved.
  6. Add cardamom powder and saffron water and mix well.
  7. Add the chopped nuts. ( You can also fry nuts in 1 tablespoon ghee in a separate pan before adding it). Mix it well.
  8. Serve hot and enjoy!
