Every time I make sambar at home, the smell of mustard seeds crackling in hot ghee and curry leaves hitting the pan takes me straight back to my aunt’s kitchen in Chennai, where a pot of this fragrant lentil stew was always simmering on the stove. It is the kind of dish that instantly makes any meal feel complete, tangy, spicy and comforting all at once. I have made this recipe more times than I can count, and it never fails to disappear from the table.

What is Sambar?

Sambar is a tangy, lightly sweet and spicy lentil-based vegetable stew that forms the backbone of South Indian everyday cooking. It is made by cooking toor dal (split pigeon peas) until soft, then simmering it with tamarind, a special sambar powder, and a mix of vegetables like drumstick, brinjal, pumpkin or okra. The final tempering of mustard seeds, curry leaves and dried red chilies in hot ghee or oil is what gives sambar its distinct aroma.

Where Sambar Comes From

Sambar is believed to have originated in Tamil Nadu, though it is now claimed and loved across Tamil Nadu, Karnataka, Andhra Pradesh, Telangana and Kerala, each region adding its own twist to the spice blend and vegetables used. It is a staple of temple kitchens, especially in Udupi cuisine, and is eaten almost daily in South Indian households, usually spooned generously over steamed rice, or served alongside idli, dosa and vada. No South Indian thali is considered complete without a bowl of hot sambar.

Health Benefits of Toor Dal

Toor dal, the base of sambar, is a nutritional powerhouse in everyday Indian cooking.

  • It is rich in plant-based protein, making it an excellent option for vegetarians looking to meet their daily protein needs.
  • High in dietary fiber, it supports digestion and helps keep you full for longer.
  • Toor dal is a good source of folate, iron and potassium, which support red blood cell production and heart health.
  • Combined with vegetables and tamarind, sambar also delivers vitamin C and antioxidants in a single bowl.

Ingredients:

  • 3/4 cup toor dal (split pigeon peas)
  • 2 cups mixed vegetables (drumstick, brinjal, pumpkin, carrot, okra)
  • 1 small onion, chopped
  • 1 tomato, chopped
  • 1 tbsp tamarind paste (or a small lemon-sized ball of tamarind, soaked)
  • 2-3 tbsp sambar powder
  • 1/4 tsp turmeric powder
  • Salt to taste
  • 2 tbsp ghee or oil
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 2 dried red chilies
  • 1 sprig curry leaves
  • A pinch of asafoetida (hing)
  • Fresh coriander leaves for garnish

Instructions:

Step 1: Cook the dal

Wash the toor dal well and pressure cook it with turmeric powder and 2 cups of water for 3-4 whistles, until soft and mushy. Mash it lightly with a spoon or whisk.

Step 2: Cook the vegetables

In a separate pot, add the chopped vegetables, onion and tomato with enough water to cover them. Cook until the vegetables are just tender, not mushy.

Step 3: Add tamarind and spices

Add the tamarind paste, sambar powder and salt to the cooked vegetables. Let this simmer for 8-10 minutes so the raw tamarind smell cooks off.

Step 4: Combine with dal

Add the cooked, mashed dal to the vegetable mixture. Add water to adjust consistency and simmer everything together for 5-7 minutes.

Step 5: Prepare the tempering

Heat ghee or oil in a small pan. Add mustard seeds and let them crackle, then add cumin seeds, dried red chilies, curry leaves and a pinch of asafoetida. Pour this sizzling tempering over the sambar.

Step 6: Garnish and serve

Garnish with fresh coriander leaves and serve hot with steamed rice, idli, dosa or vada.

Tips:

Use a good quality sambar powder for the best flavor, homemade or a trusted regional brand works well. Do not overcook the vegetables, they should hold their shape. If you like a thinner sambar for idli or dosa, simply add more water. Sambar also tastes even better the next day, once the flavors have had time to sit together.
