Tiranga Paneer Tikka

Every year around Independence Day, I like to bring a little bit of the tricolor to our dinner table, and this tiranga paneer tikka has become our family’s go-to. It is the same beloved paneer tikka everyone loves, just dressed up in saffron, white and green to match the flag. My kids look forward to it every August, and it is always the first plate to empty at any get-together.

What is Tiranga Paneer Tikka?

Tiranga paneer tikka is a festive twist on the classic Indian paneer tikka, where cubes of paneer are marinated in three separate marinades, a spiced saffron-red one, a creamy white one, and a fresh green one, so that when skewered together they mirror the colors of the Indian national flag. It is grilled or roasted until the edges turn slightly charred, giving it that familiar smoky tikka flavor in every bite.

Where This Dish Comes From

Paneer tikka itself has roots in North Indian and Punjabi tandoor cooking, where marinated paneer is traditionally cooked in a clay tandoor oven. The tricolor version is a more modern, festive adaptation that has become especially popular around Independence Day (August 15) and Republic Day (January 26) celebrations, when home cooks and restaurants alike love to add a patriotic touch to their menus.

  • Paneer is an excellent source of protein and calcium, supporting muscle and bone health.
  • It is a good vegetarian option for those looking to increase their protein intake without meat.
  • Paneer contains conjugated linoleic acid (CLA), which some studies suggest may support metabolism.
  • Pairing paneer with fresh herbs like mint and coriander, as in the green marinade here, adds extra vitamins and antioxidants to the dish.

Ingredients:

  • 400g paneer, cut into cubes
  • For the saffron marinade: 1/4 cup thick yogurt, 1 tsp Kashmiri red chili powder, 1/2 tsp garam masala, 1 tsp ginger-garlic paste, salt
  • For the white marinade: 1/4 cup hung curd, 2 tbsp cream or cashew paste, 1/2 tsp black pepper, salt
  • For the green marinade: 1/4 cup mint-coriander paste, 1 tbsp yogurt, 1 green chili, 1 tsp lemon juice, salt
  • 2 tbsp oil or melted butter, for basting
  • Wooden or metal skewers

Instructions:

Step 1: Prepare the three marinades

Mix the ingredients for each marinade separately in three bowls, keeping the saffron, white and green mixtures distinct.

Step 2: Marinate the paneer

Divide the paneer cubes into three equal portions. Coat one portion in the saffron marinade, one in the white marinade, and one in the green marinade. Let them rest for at least 30 minutes.

Step 3: Skewer in tricolor order

Thread the paneer cubes onto skewers in the order of the Indian flag, saffron, white, then green, repeating as needed.

Step 4: Grill or roast

Cook the skewers in a preheated oven at 200°C (400°F), on a grill pan, or on a tandoor for 12-15 minutes, turning occasionally and basting with oil or butter, until the edges are lightly charred.

Step 5: Rest and serve

Let the skewers rest for a minute or two, then serve hot with mint chutney and lemon wedges.

Tips:

Pat the paneer completely dry before marinating so the coating sticks well. Do not marinate paneer for too long in acidic yogurt, as it can turn crumbly, 30-45 minutes is enough. If using wooden skewers, soak them in water for 20 minutes beforehand to prevent burning. This same tricolor idea also works beautifully with vegetables like bell peppers and paneer for a fun kids’ party version.
