
What is Khichdi?
Khichdi is a wholesome and comforting one-pot meal made from a combination of rice and lentils. It is a popular dish in Indian cuisine and is known for its simplicity and nourishing properties. Dal Khichdi is easy to prepare and is often considered a comfort food, especially during times of illness or as a light and comforting meal. It is a versatile dish that can be made with various combinations of lentils and rice, and it’s typically seasoned with mild spices.
Where it’s Eaten the Most?
Khichdi is enjoyed throughout India and is a favourite in households across the country. It is a common dish served during festivals, fasting days, and also as a part of regular meals. Different regions have their variations of Khichdi, each with its unique blend of flavours.
Preparation Time: 25 Minutes
Ingredients:
- 1/2 cup basmati rice (or any short-grain rice)
- 1 cup split yellow Toor/ Arhar dal
- 4 cups water (for cooking)
- 1 medium-sized onion, finely chopped
- 1 medium-sized tomato, chopped
- 1/2 cup mixed vegetables (carrots, peas, beans, etc chopped – optional)
- 2-3 cloves of garlic, minced (optional)
- 2 tablespoons ghee (clarified butter) or oil
- 1 teaspoon cumin/ mustard seeds as per your taste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to spice preference)
- 1/2 teaspoon coriander powder
- Salt to taste
- Fresh coriander leaves for garnish
Step-by-Step Process:
- Rinse and Soak Rice and Lentils:
- Rinse the basmati rice and moong dal under running water until the water runs clear.
- Soak the rinsed rice and dal in water for about 15 minutes. This step helps in better cooking and enhances the texture. (Optional)
2. Prepare the Vegetables (Optional):
- Wash, peel, and chop the vegetables of your choice into small pieces. You can use carrots, peas, beans etc.
3. Cook the Khichdi:
- In a pressure cooker/ a deep pot heat ghee or oil over medium heat.
- Add cumin/ Mustard seeds and let them sizzle.
- Add finely chopped onions and sauté until they turn golden brown.
- Add minced garlic (if using) and sauté for another minute until the raw aroma disappears.
- Add chopped tomatoes and cook until they become soft and mushy.
- Mix in turmeric powder, red chili powder and salt. Stir well to combine the spices.
- add Vegetables and let it cook for 3-4 minutes (Optional)
- Drain the soaked rice and lentils and add them to the pot. Stir them together with the spice mixture.
- Mix everything evenly.
- Pour 4 cups of water into the pot and mix well.
- Close the pressure cooker lid and cook the khichdi on medium-high heat for 3-4 whistles or until the rice and lentils are well-cooked and soft. If using a pot, cover it with a lid and let it cook until the rice and lentils are fully cooked and the khichdi reaches the desired consistency.
4. Garnish and Serve:
- Once the pressure is released, open the cooker lid and give the khichdi a gentle stir.
- Garnish the Khichdi with fresh coriander leaves.
- Serve the hot and comforting Khichdi with yogurt, papad, pickle, or ghee on top.
