Carrot Halwa Recipe | How to make Gajar Halwa at home
Carrot halwa, also known as “Gajar ka Halwa” is a traditional Indian dessert made from grated carrots, milk, sugar, ghee and nuts. It’s popular sweet dish across India and is often enjoyed during festivals, celebrations, and special occasions.
Ingredients:
- 500 grams carrots, peeled and grated
- 500 ml full-fat milk
- 1/2 cup sugar (adjust to taste)
- 4 tablespoons ghee (clarified butter)
- 1/4 cup chopped nuts (almonds, cashews, pistachios)
- 1/4 teaspoon cardamom powder
- Saffron strands (optional, for garnish)
Instructions:
- In a pan add 4 tablespoon ghee and heat it on medium flame
- Add the grated carrots to the pan and sauté them in ghee for 7-8 minutes until they turn soft and aromatic.
- Once the carrot is little cooked, Pour the milk into the pan with the carrots and stir well.
- Allow the carrots to cook in the milk over low to medium heat, stirring occasionally, until the milk reduces and thickens, and the carrots are soft and cooked through ( 20 – 25 minutes)
- Add sugar and mix well until the sugar is dissolved.
- Add the cardamom powder and cook for another 5-7 minutes until the halwa reaches desired consistency.
- Garnish the carrot halwa with saffron strands
- Add chopped nuts
- Halwa is ready. You can serve it hot.
If you prefer cold halwa you can keep it in the fridge for sometime. It tastes better. You can have this halwa with ice cream as well.
You can also make carrot halwa in pressure cooker. It takes less time to cook the carrots.
Carrot halwa is often prepared and served during festivals and celebrations such as Diwali, Holi weddings and other special occasions. Carrot halwa is particularly popular during the winter season when fresh carrots are abundant and sweet.
