
My mother says, a kitchen doesn’t smell like a celebration until it’s filled with the scent of jaggery and cardamom cooking down together. I used to think it looked complicated from the outside, but once she showed me her trick for rolling it, I realized it’s more patience than skill.
What is Puran Poli?
Puran poli is a soft, golden flatbread from Maharashtra stuffed with a sweet filling of cooked chana dal, jaggery, and warm spices like cardamom and nutmeg. The word puran refers to the sweet lentil filling, while poli means flatbread. Unlike many stuffed breads that are savory, puran poli is entirely dessert, rolled thin and cooked on a griddle with generous ghee until it turns lightly golden on both sides.
Where Puran Poli Comes From
This dish is deeply rooted in Maharashtrian cuisine and also made very frequently in Gujarat, close cousins of it, like bobbatlu and holige, are made across South India as well. It’s traditionally prepared during major festivals such as Ganesh Chaturthi, Holi, and Diwali, when families gather to cook large batches together. In many homes, making puran poli is treated as a small ritual in itself, with the whole process, from cooking the dal to rolling the dough, shared among several hands in the kitchen.

Ingredients:
- 2 cups whole wheat flour
- 2 tablespoons ghee, plus more for cooking
- A pinch of turmeric powder
- A pinch of salt
- Water, as needed
- 1 cup chana dal, soaked for 30 minutes
- 1 cup jaggery, grated
- 1/2 teaspoon cardamom powder
- A pinch of nutmeg powder
- 1 tablespoon ghee, for the filling
Instructions:
Step 1: Make the dough
Knead the whole wheat flour with turmeric, salt, ghee, and enough water to form a soft, pliable dough. Cover and rest for 30 minutes.
Step 2: Cook the chana dal
Pressure cook the soaked chana dal with enough water until very soft, then drain any excess water completely.
Step 3: Make the puran filling
Mash the cooked dal and cook it with jaggery on low heat, stirring often, until it thickens into a dry, dough-like mixture. Stir in the cardamom and nutmeg, then set aside to cool completely.
Step 4: Stuff and roll
Take a ball of dough, flatten it slightly, and place a larger ball of the cooled puran filling inside. Seal the edges and gently roll it out into a flatbread, dusting with flour as needed.
Step 5: Cook on the tawa
Cook on a hot griddle with ghee on both sides until golden brown spots appear.
Tips:
Make sure the puran filling has cooled completely before stuffing, or it will be difficult to roll without tearing. Roll gently and evenly using light pressure so the filling doesn’t burst through the dough. Serve warm with a spoonful of ghee on top, or alongside a glass of warm milk.
