Kashmiri Dum Aloo

It’s one of those curries that looks simple on the plate but tastes like it took hours of love to make.

What is Kashmiri Dum Aloo?

Kashmiri Dum Aloo is a curry of baby potatoes that are lightly fried and then slow-cooked, or “dum” cooked, in a smooth yogurt-based gravy built on fennel, dry ginger powder and Kashmiri red chilli. Unlike the Punjabi or Bengali versions of dum aloo that lean on onion and tomato, this one traditionally skips both, letting the whisked curd and warm spices carry all the flavour.

Where Dum Aloo Comes From

This dish comes from the Kashmir valley, and is especially close to Kashmiri Pandit cooking, where onion and garlic are traditionally left out of everyday meals. It’s a dish you’ll find at family gatherings and festive lunches, usually served with steamed rice, and it’s part of a home-cooking tradition that relies on toasted spices rather than aromatics for depth of flavour.

Ingredients:

  • Baby potatoes – 500g
  • Thick curd/yogurt – 1 cup, whisked
  • Mustard oil – 3 tbsp
  • Fennel powder – 1.5 tsp
  • Dry ginger powder (saunth) – 1 tsp
  • Kashmiri red chilli powder – 2 tsp
  • Green cardamom – 3 pods
  • Cloves – 3
  • Cinnamon stick – 1 inch
  • Bay leaf – 1
  • Asafoetida (hing) – a pinch
  • Salt – to taste
  • Water – as needed

Instructions:

Step 1: Prep the potatoes

Boil or par-boil the baby potatoes until just fork-tender, then peel and prick them all over with a fork so they soak up the gravy.

Step 2: Fry until golden

Heat mustard oil to smoking point, let it cool slightly, then shallow-fry the potatoes until golden and blistered; set them aside.

Step 3: Build the base

In the same oil, add hing, bay leaf, cinnamon, cloves and cardamom, and let them sizzle for a few seconds.

Step 4: Add the spice powders

Lower the heat and add fennel powder, dry ginger powder and Kashmiri red chilli powder, stirring quickly so they don’t burn.

Step 5: Bring in the yogurt

Turn off the heat, add the whisked yogurt gradually while stirring continuously to prevent curdling, then return the pan to a low flame.

Step 6: Dum cook

Add the fried potatoes and a little water, cover tightly, and let everything simmer on low heat for 10-12 minutes until the gravy thickens and coats the potatoes.

Tips:

Always add yogurt off the heat and keep stirring so it doesn’t curdle. Prick the potatoes well, since that’s what actually lets the tangy gravy soak in. For a deeper red colour without extra heat, soak the Kashmiri chilli powder in a little warm water before adding it to the pan.
