Instructions:
Step 1: Cook the vegetables
In a heavy-bottomed pan or manchatti, add the ash gourd cubes and boiled cowpeas with the thin coconut milk, slit green chilies, and salt. Add just enough water to keep it from sticking. Cook on medium-low heat until the ash gourd is soft but still holds its shape, about 8-10 minutes.
Step 2: Add the thick coconut milk
Lower the heat and stir in the thick coconut milk. Let it warm through gently for 2-3 minutes without letting it boil hard, as high heat can split the coconut milk and dull its flavor.
Step 3: Finish with curry leaves and coconut oil
Turn off the heat, tear the curry leaves and add them in, then drizzle the raw coconut oil over the top. Cover the pan for a minute so the aroma infuses into the curry before serving.
