Black Chana

What is Black Chana?

Black Chana/ Kala Chana/Bengal Gram, is a variety of chickpeas that is dark brown/ black in color. It is a nutrient-dense legume that is rich in protein, fiber, essential vitamins and minerals. Boiled Black Chana is a healthy ingredient commonly used in various Indian dishes, salads and snacks.


  • 1 cup black chana (kala chana)
  • Water for soaking
  • Water for boiling
  • 1/4 tablespoon mustard seeds
  • 1/2 tablespoon Chilli powder
  • 1/2 tablespoon coriander powder
  • 1/4 tablespoon turmeric 
  • pinch of garam masala (optional)
  • Salt to taste
  • Chopped coriander leaves (half small cup)
  • 6-7 garlic cloves finely chopped



Step 1: Soaking Black Chana

  • Rinse the black chana under running water.
  • Place the black chana in a bowl and cover with enough water to submerge them. Allow them to soak overnight or for at least 6-7 hours.

Step 2: Boiling Black Chana

  • Drain the soaked black chana and rinse them once again.
  • Transfer the black chana to a pressure cooker and add enough water to cover them. Add a pinch of salt (optional)
  • Cook it on medium flame until 7-8 whistles
  • After 7-8 whistles, you can check for doneness by pressing a chana between your fingers; it should mash easily.
  • Give 2-3 more whistles if needed until it starts mashes easily. 

Step 3: Draining and Serving

  • Once the black chana is cooked to the desired tenderness, drain the excess water.
  • You can serve boiled black chana as a standalone snack or incorporate them into various dishes like salads, chaats, or curries.

Step 4: Seasoning:

Heat 1 tablespoon oil in a pan, add mustard seeds, chopped garlic and spices like coriander powder, red chilli powder and garam masala. Now add the boiled black chana in the pan.

Add half cup of water and stir it properly to mix the spices. Once the water nearly evaporates add coriander leaves on top and stir it nicely.

(Optional: You can also make this dish in another way by adding 1 finely chopped onion and 1 tomato in the step 4 )

Your dish is now ready!
